Kikumasemune Umeshi

I had some of this https://sakeinn.com/products/umeshu-aged-3-years with dinner tonight and it was delicious. Does anyone know how its made and aged? Is it just ume plums soaked in alcohol or is it distilled from the llums?

My son is a distributor that carries Japanese spirits as well as others. I believe although it is not a wine sometimes it is referred to as umeshu wine. Here is a recipe for making it.

I recently met up with the owner of Pekot & Carwick, an independent bottler in Berkeley, CA. He makes an unbelievably delicious Umeshu with Ume grown in California. https://www.pekutandcarwick.com/products/prunus-mume

The nose is a riot of interesting characters: almond, life savers, flowers, plum, sweet cough syrup, etc. You can spend a half hour just smelling it and enjoying the diversity of components. And of course the flavor is delicious. :)

If you can find the Ume, buy as many as you can and make a lot of umeshu!

The name “Japanese plum wine “ has piqued my interest for a while , I was also thinking it must be a wine , but the labels told a different tale .

So it seems it could be done if could get my hands on some fruit .
Interesting the variation in Alcoholic strength between brands . 10,14 , 19%

Don’t have a pic of it but one of her favourite does have a couple of the fruit in the bottom of the bottle .

Anyway , Seems if you could get the fruit , a maceration in sugar and neutral could easily pull this off .

The masipan / almond tastings are interesting .
I always figured it was something they added . Sounds like its definitely only from the fruit .

If you come across any plums, let me know. So far ive only found one thats $150 for 1.5 kg!! Next time I head into the city ill have a look around some of the japanese stores. Ill let you know what i find. You look to be on the other side of the country, but it may be possible to send you a box full if theyre cheap enough

If the fresh fruit isnt available, I wonder if this could work.

It looks to have no salt, seems to be a concentrate of just the fruits. It says 20g of the concentrate is equal to 1 kg of fruit...

I have access to several different varieties of plum trees. Might give it a go.

This is how’s it made.

80 proof Neutral liquor or vodka. Rock sugar and ume. Made it every year in summer when I was over there. Grocery stores sold kits. I found some ume at a Japanese market in OHIO 3 years ago and still have the bottle. Otherwise I haven’t seen any ume in the states since.
You could write a book on the stuff I don’t know

if you distill something you like from plums, i'd say enjoy it when you can. i made some plum brandy and it was awesome when it was new.... i was so impressed with myself, i saved some for bragging rights.
two years later it had turned into completely tasteless vodka.
prolly doesn't apply to wine...what i had was distilled.
I finally quit drinking for good.

now i drink for evil.
