GIN CUTS on larger distillations

Post by pelletier »

Hey Guys,

I am looking to make greater batches of gin. I have mastered a 3L pot still where 10-15ml head cut and collecting 800ml of distillate for every liter of 95% GNS used. I moved to a 30 liter pot still and do a 100ml head cut and collect 6 liters of distillate for 10 liters of 95% GNS used in every batch because I have noticed collecting 8 liters for the 10 liters of GNS used collects too many tails. Does someone have a guide on making cuts when scaling up production?

What do you mean by 'tails'?

If you mean undesirable flavors from the GNS, can you source better GNS? or use a Carter Head so that the GNS tails components don't come over until the botanicals are spent?

Kiwistillers' Guide is good for neutrals. For gin, choose a blend from the jars, rather than tasting individual jars.

Hope you are not putting 95% GNS straight into the Pot still without first dilution it down to around 40%.

Are you making your own GNS in a reflux still or buying it in .

+1 on all the above.
also, what is your method? (maceration, botanical basket etc)
and your botanical list for 10L, maybe you have overdone one of the botanicals?
