Make sure you have the right variety, some juniper berries are toxic.

Alligator juniper berries are used, apparently in moderation.

The gin juniper (Juniperus communis) is usually a low, prostrate shrub, so if yours looks like a tree, make sure you get it properly identified by a botanist. Some juniper species are toxic.

Quick informational question re gin ingredients-- I'm planning on doing a Gin- but looking over the threads I can't find what I'm looking for, are the ingredients crushed or kept whole if they are put in a gin basket.... I'm thinking you'd get more flavor with crushed, but I don't know, thus I ask...thanks in advance.

It is an Alligator Juniper.

I’ll give it a try with the alligator juniper berries that I have in abundance and I’ll report back.

They’re not toxic.

Do they smell about right? They might be interesting even if they don't.

FWIW I read some stuff on the net the other night that indicates that at least one commercial mob are using Alligator type Juniper...forget where I read it now. At the time I was looking to reinforce what I knew about the correct types of juniper to use are......the more I looked the more conflicting stuff I found.

I took the hearts from this run, remacerated for 18 hours, did the run with the botanicals in the boiler with the addition of anjelica root. Soooooo much better. Thanks for the direction.

Would this work in a plate reflux still? I had a crack earlier using This recipe in the gin basket and it works. However every where I read every says that in the pot is way to make a dream like gin.
Will my 4 plates remove the flavour? Should I stick to vapor infusion? Or time to get a basic column?!

Four plates will remove some of the flavor a pot still would be better and if you don’t have one they are easy to make.

Can you remove your plates and , or just turn off the defleglamator water supply.....you plated column is now basically a big pot still.
Might need a good rinse out with clean water after the gin making to rid it of the gin smell.

I am struggling to find one key information: I have an electrical heating system, what temperature should I set it to while pot distilling (starting from neutral)?

None, you set it to a %power. Temperature control doesn't work very well on a still.

I suggest you read up on power controllers, they're the better tool to use.

Update:

I wasn’t able to run this after two weeks. I came down with COVID-19 a week after my last post, and was to sick to do anything.

I finally ran it the other day when I was feeling better.

After I ran it, I cut it to 45% with distilled water. It taste great, but it has a pronounced sodium flavor.

Is that normal, and will go away after it sets for 5 weeks?

Did I let it sit to long before running?

First, glad you're on the mend.

To your question, do you mean to say it tastes like salt? In my experience, there has never been any salt taste. Possibly some contamination in either your dilution water or the container.

Thank you Expat. And yes, taste like salt but not salty, if that makes since.

It's probably the distilled water I used, the container was clean.

If that flavor doesn't go away overtime, I'll drink it anyway.

I find that distilled water never tastes right. Many people claim reverse osmosis water is best, but I just use tap.

I remember tasting the water when I cut it, but not a good test. My taste was still off from having COVID

That’s probably why it taste a little funny to me now. One of the symptoms of COVID, is loss of taste and smell. The loss of taste and smell is one of the symptoms I had, but after 2 1/2 to 3 weeks I got it back, so I thought.

It’s been just over 6 weeks when I came down with COVID, and I’m still not 100%.

Anyway, that’s probably way it taste a little funny to me.

I've been through most of the thread, but need some clarification. If I am going to put the botanicals in the boiler after macerating for 24hours and put the citrus in the vapor path. Do I put the citrus in the maceration also and then remove it?

I think you missed the first post.

"- Let it macerate at room temperature for two weeks;
- After two weeks, filter out the herbs, berries, skins, whatever"


Vapor path method wouldn't be OEG.

Great question, I want to know the answer myself!

I have macerated a lemons and limes a couple of times and my comment would be that you wont get all the flavours and oils out in 24 hours so I would be inclined to put the citrus in for 24 hours and then remove and put it in the vapour path. I reckon you will get more citrus flavours from that method so if that is what you want, that is what you should try.
