alright, one of them is bubbling good this morning,and the other looks more hopeful. it is strange how the same recipe, protocol, and yeast can start a strong ferment in a few hours in one batch, and only start a few days later in another.
Both me and my whiskey are ageing. I hope my whiskey finishes first.

Seeing this thread pop up makes me want to get liquid enzymes even tho I don't like corn

Then use wheat. Or rice. Or oats. I highly recommend tsc bag of rolled oats, and then made into a whiskey or vodka.

I've used them with millet with "great success!"

For the guys spending a lot of time grinding the cracked corn - if you have an Ag CO-OP feed store near you, ask them if they have ground corn. Mine didn’t have any pre bagged, but I asked if they could grind me a bag, and bingo. 50lbs of ground corn for $5.78

I am finally trying this. I am grinding my cracked corn with a magic bullet mini.
A need to try a commercial corn whiskey to get an idea what i am making so does anyone have any suggestions on a readily available commercial corn whiskey that will give me a good feel for what corn whiskey is? Edited to remove externally hosted pics.

Any Bourbon Whiskey is by definition at least 51% corn. I cant imagine trying to grind 10 lbs of corn with a magic bullet! Get a better grinder or buy corn meal. I grind to meal or even flour.Zeotropic wrote:I am finally trying this. I am grinding my cracked corn with a magic bullet mini.

I am going to attempt this
I bought SEBamyl GL Liquid Saccharification Enzyme 4 oz and SEBstar HTL Liquid High Temperature Amylase 4 oz
Did i buy the same thing, only one is for high temp??
Also i plan on using flaked maize so im not boiling forever.

Those are the enzymes I used. It didn't require any boiling of the corn. The SEBstar HTL seems to free up the starch and then the SEBamyl GL converts it into sugar. (Based on my highly scientific tongue analysis method.[emoji16])WillC wrote:I am going to attempt this

Oh good. I had a moment of confusion! Figured flaked maize would make things alot easier too
I would boil cracked corn, do all that but just not get the flavor i was hoping for.
I have never been concerned with my PH. Good water straight from the ground and no rusty taste.
I will check PH this time around. Got everything ordered i need.
I like to run in the winter so after it stops fermenting i can cold shock it outside and let it clear.
I dont have a thumper. So stripping run than slow spirit.
(Odd, i didnt get a notice in my email that someone replied. I have it set up to do so)

I switched to Brave browser and its blocking it as well.
I used to work in industrial instrumentation.
I know to use water that is clean and pure but not distilled or D.I.
Because of how PH meters work it needs ions.
Rinse the tip of the probe each time you dip into a testing solutions. Solutions can
be contaminated easy. After 24 hours its best to discard the solution.
Store the probe wet. I already bought this one so i will give it a try. Directions do not state how to store it.

ok, so i went ahead and ordered the Apera. I will compare the 2 probes but considering what i have spent on gear, and now supplies for this run i will spend the 50 dollar to assure this turns out.
