Almost done at 1020 and dropping then to strip insulation and cold crash it

At 1020, there is a fair way still to go. Keep the insulation on for now.

Got first 2 washes of WPOSW down, will update when I run them thru next week. First deviation from BW’s recipe for me 🤞

Hi please can you tell me if these are US measurements.? I converted to UK and got the below and after 7 days iinsulated at 30 degrees C it seems to be stuck at 1.020 (starting gravity was 1.065)

23 litres water
3.5kg sugar
1tsp DAP
1tsp Gypsum calcium sulphate
Pinch Epsom salt
1/4 cup DADY

From my experience, that formula looks pretty spot on. You can push it a lot harder by adding more sugar for a higher SG but that stresses the yeast.
My first question would be, what is the pH now and what was it when you started? If it is too low (3.5 or less), add some oyster shell, or scallop or marble to bring the pH back up over 4. I normally get pH around 5 if using shells.

Next tip is to give it a stir to get things going again (I have done this successfully a couple of times)

Final suggestion if those dont help is to add some more yeast to get it finished this time.
Taking a break while I get a new still completed....

Thank you I didn't record the starting PH as I wasn't sure what it should be? It's currently 3.4 and I added a sprinkling of DADY on Sunday. I don't have oyster shells or scallop or marble unfortunately? I'll give it a good stir now and see what happens. Should I add more DADY?

Try boiling some eggs some people use egg shells too you need to ph up to about 5- 5.3 if you have a farm supply near you try getting the chicken grit that works too I've heard on here

Thank you very much I'll order up some crushed oyster shells for poultry and give it a go ? For now I'll add some more DADY but the air lock is bubbling again now I've stirred it up :-)

When doing the next one just add the oyster shell it's like magic for me keeps my ferments coming out dry and I use tap water

Thanks I've ordered some od grade calcium hydroxide as I can't find pure oyster shell (Just mixed), I guess qty is trial and error until I get ph 5? Is 5 the right starting ph?
Ive added 4 egg shells tonight but no ph change yet. I'll check again tomorrow. How much oyster shell do you add to 23 litre wash?

I dont do liters but when I do a 5 gallon wash I use a handful when I do a 25 gallon run I use about 3or4 ounces

Use over and over till gone is what I do I make alot of this recipe as my wife and I really enjoy it well more her for her girly flavored drinks

Low pH stresses the yeast. Your starting pH should be between 4.5 and 5.5 I suggest.

The principle here is that if the pH is too low (acidic) it will dissolve the shells quicker. I think the shells are just calcium carbonate which neutralises the acid. As the pH returns to normal, around 5.0 - 5.3, the reaction will slow down.

That is to say, the shells act as a buffer and stop the pH from going too low. It doesn't really matter how many you use, the wash will dissolve a certain weight of shell.

Some only put the shells in for the first 2-3 days after which the pH will have stabilised but I leave them in.

Try asking any local restaurant that sells seafood if they have oyster shells, scallop shells or your seafood wholesaler (fish merchant)

I use any whole shell I find and use them until they disappear, weighing them before and after and recording the loss, if any, in my notes. I've never said anything about using fresh. I also have a chunk of marble I could use, but I haven't gotten around to trying it.

Hi Durhommer - I followed your advice ordered and added oyser shells. Came down to the fermenter this AM and it’s bubbling away nicely. PH now 5 and SG gone from 1.010 to 1.000 - thanks so much for your help ;-)

Just sugar washes, all grains don't need it, not experienced in other washes or mashes like fruit but my plums didnt need them.

Are there any solids in this, I'm not sure how much to rack off. It looks pretty uniform in color and clarity all the way to the bottom.

I’m running my 4th 14 gallon batch of this recipe now, been very consistent but the ph crashed at 3.5, gravity after 7 days is .990 so I’m happy, stripping run makes consistent 80 to 85 proof and spirit runs are 155 to160, I didn’t use dap or epson salt, my well water in the wash has a SG of 1.065 and ph starting was 6.45, think I’m going to add oyster shells to the next batch but I’m very pleased, last run one of my spediel fermenters puked yeast but I think one my air locks chocked 🤢😂
