Too much yeast? And fruit in thumper

Im new to this and I have a few questions,
1. I'm making a 20 gallon run of mash divided between 4 buckets. I got distracted and accidentally put 4tbs of yeast in 2 of the buckets rather than one tablespoon in each. Will that ruin my mash? Should I try to run it or just dump it now?
2. If I do flavoring, can I run a regular corn mash with fruit in my thump keg to add flavor? I'd heard about it being done and curious if it will actually pick up the flavor of said fruit.
Any help will be appreciated, thanks.

Pour half a bucket of the four tablespoon and half a bucket of the one tablespoon into a bucket. And do it again. You have dramatically reduced the amount of yeast in the over-yeasted ones and not much increased the yeast in the low-yeast buckets.

Dunno anything about grain; but I would only use fruit with a fruit mash.

1 Tbsp per 5 gallons? hope it's well aerated so they propagate. I pitch 0.5-1.0 grams per litre.
I finally quit drinking for good.

Over pitching yeast won't ruin anything but it may result in a more neutral tasting spirit compared to under pitching. As for the fruit, yes the flavour will carry over if you put fruit in the thumper, though I'm not sure why you would want to infuse fruit flavour into a whiskey. Perhaps the panty dropper method would be better to try? It'll definitely give you more flavour from the fruit.

You'll get bad flavors from under pitching yeast not over pitching.

Like goose said try every way you want, if adding fruit to the thumper... don't skimp on it and use fresh almost over ripe fruit.

In a rum base for apple pie I put 30 lbs in my thumper and the flavor was still mild but noticeable but made the best apple pie I've had. I steamed the apples without adding wash or any liquids.

Don't be afraid to jump off the beaten path and try different methods :thumbup:

. It was posted in another topic that alot of the complexity and depth of whiskey comes from esters in the spirit that mellow with aging. In the beer world, underpitching is the biggest cause of those esters and off flavours, along with manipulating fermentation temps, yeast strain, oxygen levels, nutrients, etc.

You owe it to yourself to try and do it as many ways as you can so that you can develop your own, legitimate point of view.
Over pitching is not necessarily a bad thing. It'll work off good and fast. If your finished product is a bit too bready tasting then back off a bit. And like goose says,,,"Can't mess up. Just charge it again."
It ain't like this will be your "last dam run of likker" you'll ever make.

Once you see the yeast cake that forms in a multi generation ferment you won't worry about over pitching ever again.
