My experience with diacetyl is with Chardonnay wines. The diacetyl is produced by the yeast as a fermentation byproduct and if you let it sit too long after ferment the yeast consume the diacetyl. So stopping the rum ferment at a certain point by heating and killing the yeast prevents the yeasties from consuming the diacetyl that’s there. Battonage or Sur Lie process is a chardonnay (mostly) process where you let the wine sit on the fine lees for perhaps many months. Adds body and mouthfeel - maybe this also produces diacetyl? I’d need to research more at this point to get it all straight again but there’s a lot of documentation out there on buttery chardonnay that can probably be applied to rum washes as well as usingnheat to enhance esterification. You wouldn’t heat the wine but you might sterile filter to remove the yeast to capture the diacetyl. For a rum you’re going to heat it anyway so that works as well.

The esterification enhances fruitiness right?

I mostly bring mine up to temp slow to prevent a puke but it’s probably doing some other things too?

Excessive consumption of diacetyl can contribute to Alzheimer's, so it might not be something you want to maximize in something you want to consume a lot of.

What do you reakon would get you first alziemers or liver disease.
Because something is gunna. :shock:

Well, if you get Alzheimers first you'll always forget about the liver disease. :wink:

Having graduated from looking after a parent that had Alzheimers, I'd prefer to die quickly than to burden my family with my insanity.

When I got to nearly eighty I started seeing an ageing specialist twice a year.
I thought it was best while I have most of my marbles so he can see how I am going.
So far so good.

One of my employees cares for his parents, both with dementia. It's a very sad situation.
