41 Yr old Corn Syrup ?

Hello again everyone.
As the title states.... I have very aged Corn syrup... Afraid it's not been on oak though... :(
Anywhooo.

Would you all use it ?
Or
Chuck it ?
I did a small...um.....Very ..small taste test. hahahahaa Seems alright.

I've 6 quarts of the stuff,
What Ratio would..."would".. you mix it at.
2 quarts to 6 gal of water with 4 inches of SF is what I'm thinking.
Looking forward to some feed back.

Gotta' refractometer? You could check the Brix of it. Hard to tell how much sugar it has in it without checking.

Otherwise, sure....use it. I'd add the syrup to water first before pouring on top of your sweet feed. Then, check the OG of the syrup solution so you know how much sugar it has in it.

Incidently, when using honey to make a ferment...1 gallon is roughly 10-11 lb. and I'd add that to 5 gallons of water to make a honey must. That would give me about a 1.080-1.085 starting gravity (approx. 10-11%ABV potential), which is acceptable for a mead.

So, by analogy, your 2 quarts per 6 gallons of water would be a little light, more like a 1.040 OG, or about 5.2%ABV potential. I would think you could at least add another quart of the syrup, that would give you approximately a 1.061 OG, or about 7.9%ABV potential. Probably better because the sweet feed is just added for flavor and won't contribute much fermentable material unless you mash it.

From a contamination perspective there isn't much that can survive in a high osmolar environment like syrup or honey. If there is some surface grunge scoop it off if you want and feel extra safe. Fermentation will further clean it up with the sterilization effect of alcohol. The heat of distillation plus the separation of alcohol vapor from the brew liquid will ensure that drink will be safe in as much as any alcoholic beverage can be.

I've yet to try out any syrup or honey recipe's. Having Fantastic results with just the VERY simple sugar corn washes threw a very simple copper pot still set up.

I'm very curious if the syrup being aged has anything special in it for a flavor.
I had a very hard time combing threw the threads even in "searches" to pull up any thing for a ratio.

I'll have a small simple SF sugar wash ready to run and will use it as kinda of a control for our experiment (This will Be my First try at a SF run)
AND Taking "still-stirrin's" advice. I'll try 3 quarts of the syrup in the new batch.

I just got it all cooking in the bucket, Time to kick back and watch the fire works and listen to the rumble.
And I found a partial.... true date ...of sorts.

Well, A quick peek in the 6 gallon bucket this morning.
Very impressed with the start of fermentation. It's one of the strongest bubbling ferments Ive encountered. She's doing it by golly.

And for those interested. Here is my method to my madness.

2 Inches Of milled down Scratch. Purina style brown bag
2 Inches Of Sweetfeed 3/1
3 table spoons Fleischmanns Bakers yeast
1 cup Brown sugar
3 QT 41 year old Karo corn syrup ...Haaaa

Just follow what most are doing for starting the sweet feed in the Recipe threads. Boil water ETC..
I did boil water then add syrup, stirred it vigorously before adding to already soaking Grains.
I almost had a mess proofing yeast as I started it a bit early in the process, and while I was waiting for things to cool down before adding it.

I use a 6 gallon Bucket, I also use a fish tank heater to keep it a nice constant 79 degrees.
This has worked Fantastic for my simple Sugar washes.

We've a week now to sit and ponder the dilemma before running..
Time for some more Research and reading.

If you mix just the syrup and water to get a gravity of 1.075 or so you should be fine, then mix with the grains.

SS said it all before and I figured I'd toss it back again, have fun with it and for future reference I'd make enough to strip a couple runs and then do a spirit run for a smoother product, should be good too!!!

Hello again Fellers.
Just a quick update of sorts.
Checked the witches brew this morning. It's all done cooking.
Cold crashing it for a day .....
It definitely has the sour.....But also a new to me beer taste to it.
Should be quiet interesting to say the least... Least that's what I'm thinking.

Run Results for those following.. Thanks if you are.
Of course it needs a few days to breath.. But it came out super neutral.
120 proof
to 55.. Is where I stopped.
The very mid sections (hearts) has a.... very slight... hint to a taste. Not much of any thing happing from the drip though.
Course, heads is heads and tails is tails.
Smooth and neutral is all I can say my friends. Smooooth and neutral, to the point of just.... Blaaaaaand.
Not very exiting I'm afraid..
See what happens here in a few days time.

On a side note... My first two SF runs a success.... Didn't blow up and it's drinkable.. whooohooooo..
As pop's would say... On wards and up wards..
Now where's my CORN whiskey...yum yum..

Since were experimenting..... Heheheee.
I went ahead and pulled from the upper spectrum and lower end as their seem to be a hint this morning as something of a flavor their in both..
Hearts seem to be coming about better too,...

Combing the two ends gets me 90 proofage.
In went a few chips of mesquite and some spiced peaches in the other.
3 nuclear cooks in the microwave.. Something crazy cool happing ...Very smooth. and mellow for flavoring.
Checking the nuclear off my list to try too.

No clue what I'm doing... but it's fun doing it and I'm getting some good interesting results.
Fun batch to experiment on.
I am saving the hearts...as Is... it is still feeding the angles.

Spirit run results.

Super hard to describe... I'll give it a shot though.
Way better then I even dreamed possible.
Seems to be the best batch of my makings.
Very simple yet complex flavors. You get a hint of rummy sweet, corns, grains, smoked, whiskey, and finished off with another hint of a sweet... Very balanced.
Hope it stays with all this and doesn't change up on me now in the next few days.

I did add back the mesquite and peach in the spirit run. Along with the heads and tails..
All in all a success and very delicious.
Now to set some aside and see what some correct ageing will do..
