Hey guys!
I've been trying to figure this out for a while now so maybe anyone here knows a bit better.
So basically I'm making a basic sugar wash with baker's yeast. It ferments for 10 days before double distilling in a pot still. Then I dilute it to 45 abv and it tastes awesome but when I put it in the fridge, cool it down and try then, it tastes more like regular moonshine. That specific part that I tested was taken straight from the hearts.
Anyone knows why this might happen or the science behind it?

I'm guessing that would indicate tails? But no, it doesn't.

Because it is cold coming out of the refrigerator, your senses are different. Cold beverages stifle the aroma and your sense of smell is a fundamental component of your sense of taste. Let the spirit warm to room temperature and you’ll notice the flavor “expand” significantly.
Drink it cold out of the refrigerator and it will taste much different. The spirit is the same...your senses aren’t.

Yep. Typically cold suppresses the ability to taste certain things, allowing others to come to the forefront. Whatever your tasting is probably there when it's warm, but other flavors hide it.
