Cloudy after Proofing Is there a fix?

Post by 35spline »

I followed NChooch's Carolina Bourbon recipe and everything went well until I proofed it to 50% ABV. My clear shine got a bit cloudy. I am wondering what just happened and if there is anything I can do to fix it? This is my second whiskey run thru my beer keg pot still. I have a 2" stainless column with copper mesh. My final cuts kept were 78 to 71% ABV. I proofed a jar that was 79% ABV and the same thing happened so I don't believe It is too much to do with tails being present. What went wrong?

Generally the cloudiness indicates that you have dropped too low in the tail. You could leave it so if it's not bad and it will be aged or decide to distill again if it has a bad taste.

Could be the water. Some water just louches. Distilled water is best

I did add the water to the likker. It was distilled water.

I was thinking that but I got the same cloudy results on a jar that didn't make the cut because it contained heads at 79% ABV.

cloudiness at 50% and 79%, i nevwr had it at that high proof. i will suspect your alchohol meter being not accurate.

I was proofing to 50% ABV a jar that was 79% ABV. It was clear until I added the distilled water.

I think the problem could be a non-perfect separation, this can happen if you run too quickly (= too much input heat). It's just a hypothesis but I think it's not far from ...

I forgot that I had to shut off power to the still for two to three hours. I had already collected 4 to 5 jars and was still in the heads when this occurred. I was running it pretty slow and when I resumed I went slow as well. It seamed like the distillation started back up right where it left off. Obviously I didn't this to happen but the water supply pump (to cool the still) blew a capacitor.
