Sometimes after I use my calculated water volume and strike temp, I use more water during mashing to control temp when the temps are just off or when trying to help drop temps for pitching (my wort chiller is too small for the larger batches).
I started to think if the higher volumes and lower SG affect anything beside the simple fact larger volume means it takes up more space and more to strip. I usually shoot for .06 to .08 SG. But what if hypothetically it ended up being half the SG but twice the volume? Do you think flavor would be affected?

No real difference other than volume. If you push the yeast too hard you can get off flavors. Run a few 1.04 opening whiskeys. All were good.
If using a pot still, your runs will be a lower abv due to the lower starting %.

Not that I've tried this but doing so would allow a faster ferment I'd think
