Hearts combined in pot still

Post by Demy » Thu Oct 01, 2020 6:03 am

The other day I was distilling some wine with my little still in pot-still mode. Given the quantity it is necessary to do a double distillation otherwise I find myself the alcohol spread between hearts and tails. So I thought I'd try one thing: first run, slow start, I discard the heads, just collect those little hearts with really great aroma (little stuff) everything else goes into low wines. Second run with low wines, distilled as is usually done. In the end I mixed the first hearts (very aromatic) with the hearts of the second run (aromatic but refined). The result was exceptional, aroma and refinement at the same time. Has anyone ever tried this?

I haven't but I think it's a great idea, like a separate feints run. What a perfect example of modifying one's processes to fit one's equipment.
