Around here stainless steel barrels are few and far between.
I could probably have something welded up for me
but
55 gallon steel drums are cheap and plentiful.
Is there any practical reason not to use a cut-down 50-gallon barrel to jacket my little beer keg?
Fill up with an appropriate liquid.
Plug in electric elements
Heat up the liquid and let the beer keg do its thing with no scorching and no worry about adding extra water with steam injection.
Anything I'm missing? Rustoleum.

Only the normal heat transfer inefficiency as the still charge boiling point approaches the boiling point of the water in the jacket.

If you mean the "bain-marie" it will only work with a liquid that has a lot alcohol because it has a lower boiling point, for example, on a stripping will not work, I have already passed from all this. I built my "humble" steam jacket and I wouldn't go back, it works beautifully, a bit of water on the bottom to cover the elements and everything. I found a lot of difficulty in the construction due to the difficulty of finding adequate pieces but you are ahead of this. There is a post on the forum on my construction.
