I had been hoping to avoid a drastic reduction in takeoff diameter and go more gradually. For my 2" CCVM column build I had been planning on a 2" takeoff and elbow and building a 3/4 x 1/2" Liebig for the product condenser. With a (planned) 2" to 1" concentric reducer, I thought it'd be straightforward to get a 1" sanitary to 1/2" MNPT fitting and be good to compression-fitting from there onto the Liebig.
BUT, I am having a devil of a time finding 1" sanitary to 1/2" NPT fittings. All the "to .5" NPT" options seem to be in 1.5" sanitary instead. OK, well and good, but would the pool formed from the larger "stop" where 1.5" reduces to a .5" to the Liebig pose a problem?

I'm not sure, but I think a 1-1/2 and a 1" use the same clamp and can be connected together

I don’t think you will have any pooling issues worth worrying about .There will be hundred times more smearing happening in your cuts jars.

I've got 3/4" and 1/2" with the 1.5" ferrule clamp and gasket.

1" and 1.5" have the same size outer dimensions for the tri clamp they are interchangeable just the inner dimension is different
