What sort of still you build depends on what sort of spirit you wish to make.
When you say " column" do you mean column or still.?

Welcome. As you read you will find that for a flavor a pot still is most common, although plated columns seem to be picking up a following. And speed is controlled by power so if going electric spring for as much of an element as your electric system will handle. That is for stripping runs, speed on spirit runs is how much smearing of heads and tails you are willing to accept.
