I am just here to introduce myself, I am English but have lived in France for 13 years. I mostly make Scotch from peated or smoked malt. I have however made apple cider brandy, I also like aging with different woods. I am gaining lots of knowledge reading the various posts and have used the calculations a number of times.

I came to this forum because everytime I had a question the answers was found right here.

I am posting my apple cider brandy it is simple I juice the apples from my trees, I try to mix sweet and sharp apples I ferment this with a cider yeast strain and then distill.
I then age it with various woods
