I already naively tried to post without greeting in the Welcome Center, so I apologize.
I would describe myself as some average middle age man interested in "alive things and processes". I am a gardener, got some backyard chicken for eggs and manure and I tend them. I love being around the little funny girls and I love plants too. My interested in fermentation comes from being puzzled with the forces of a compost pile. Years ago I started controlled fermentation of substrates, making sauerkraut first and later on, after discovering this forum, fermenting Birdwatchers sugar wash, from the tried and tested recipes.
Recently, I have been researching Asian rice wine fermentation in the internet and bought a small incubator to make cooked rice wine. I wanted to try another substrate than sugar, in this case, grain. As getting malted barley is difficult where I live and not economical, I tried this Asian approach of cocked rice wine. I am aware that this is not the traditional Western grain brewing, with koji fungi responsible of the saccharification process instead of mashing with malt. But,I have got good results, nice and drinkable, milky like rice wine and I learnt that, at least with rice, If there is access to a commercial koji starter and some temperature incubator for few days it is possible to ferment without malt or any other specialized equipment than some normal home pots and crocks.
I will probably start trying this Asian style fermentation with corn too at some point. Now, I am building a bigger incubator for bigger batches and I plan to start distilling soon. I am interested in distilling mostly for practical reasons. Where I live, in the Atlantic coast, Southern Europe, the weather is very variable, with humid hot and cold variations all over the year. I see distilling as the reasonable way of a quality alcoholic drink in my environment and with my available resources.
I am eager to learn and happy to share some of my experiences.

Welcome from me. I malt my barley, it's not a very difficult process (if you get some barley). Many things intrigue me too and I always want to learn, I understand you well!

Welcome, keep good records of your process and if you are happy with the outcome then post it in the appropriate thread. Your love of gardening can produce products you can use in the hobby. Good luck!
