Been trying to figure this whole thing out. I will only be running the "old style" equipment, its a personal thing.

What do you mean by "old style" Im guessing pot or pot and thumper?
What sort of spirit do you hope to make ? Whisky ? Rum? Brandy or something else ?

Welcome to the HD community bantasbees! Simple copper pot still is all you need IMO... Until you need something else anyway lol

#1. If (or once) your still is already fabricated, then scrub it on the inside. Then do a cleaning run (cooking vinegar water under heat) to blow out any residuals; but also to get a feel for the way things work, how long it takes for an appropriate volume of liquid for your boiler to normalize (to reach working temperature). Monitor the assent of the heat by touch, as it begins to climb through the metal, through the thumper and worm (if you'll use them).
#2. If the volume of your kettle is not too big (say within the 1 – 5 gallon range) then you can take a shortcut. Look for and collect stale, flat or very cheap wine or beer to practice on. You'll get an instant impression of whether the hobby is worthwhile or not. Later, you'll have the time to concentrate on fermenting your own beers & wines (mashes & washes).

Im running a 15 copper kettle still with a 1.5 gal thumper after weeding on here might get a bigger thumper.
So far Ive only run a sugar wash. And then worked with flavoring from there.
