Greetings from Chios, a Greek island in the northeastern Aegean Sea. I have been a home brewer for 20 years and with distillation for about 15 years. Traditional distillate of Chios is SOUMA, fermentation of dried figs with water and distillation with various herbs and anise looks like ouzo in taste) I like Gin and Ouzo.
That's the time I distill Gin. I started at noon and distilled about 900ml per hour.

Welcome. Your English is better than my Greek. With all your experience you will have a lot to add. Perhaps your recipes for SOUMA and Ouzo.

Welcome to HD! Hope to hear some interesting recipe approaches and musings from your side of the world! My step father used to teach me dirty words and the greek alphabet but that was a minute ago lol.

Welcome, you can keep the ouzo but I like the gin. I have been to Izmir, Turkey which is probably closer to your island than the mainland of Greece.
