Just a quick introduction (and thank you) from a longtime lurker.
I started the hobby nearly a year ago and this site has been (still is) an extremely valuable information source. To date I've had great success with AG bourbon style whiskey turned out very similar to Balcones Baby Blue This one is fermented on grain and distilled after straining and squeezing out the grains (husks) after ferment.
Another success is a rum inspired by Plantations pineapple expression. That one is still aging in French oak and coming on nicely but still a long way to go... 6 months in barrel.

Welcome, I have been on the forum over a decade and still learn from skilled members in all aspects of the hobby. Enjoy the journey!
