New Member in the Middle of the Pacific Ocean

Aloha, and thank you all for this wonderful resource.
I grew up making 55gal batches of beer and wine with my father and another dozen or so years making bread by trade, so fermentation is quite familiar. The last 20yrs has been in commercial and industrial mechanical, controls and engineering, so exchanging heat isn't foreign. Nor, is process programming.
I, quite frankly, would like to try to make just about everything (I just finished a f'ing amazing Jackfruit run, for example). Hopefully, this forum will allow me to continue to gain and pass on knowledge.
I started out with a small pot, thumper, and worm and now have completed a modular 2" boka with a small water chiller for condensing.
Due to being so isolated from the rest of the world, every project is kinda like a Gilligan's Island episode. But with Bezos moving here, maybe Prime won't take 2 weeks anymore? :sarcasm:

1st starfruit soon.
I didn't start this journey to end with sugar washes. Not that there's anything wrong with that. I still like sugar, just gotta test the waters with this stuff.

I have tried sun drying Starfruit. They turned into a lovely, sticky, chewy, treat. I reckon they would be as useful and easy as grapes for making a brandy.

Welcome Juana. I guess your background and build skills make you the Professor in this endeavor. Can’t wait to see your coconut shell column or what Mary Ann will do with that Neutral you make. I’m guessing it will be coconut cream panty dropper. ;-). Otis
