100% malted rye mash

Post by 135587 »

Hi all
Is your typical 100% malted rye mash fairly thick, almost syrupy, after mashing?
Will it damage the flavor by adding water to the mash wort prior to 1st distilling? To help avoid burning,
Thanks

Last month I conducted a stovetop test mash using 4.5lbs of 100% home-malted rye (3.5lbs pale malt and 1lb of caramel rye) and 2.25gal of water. The malt was milled to slightly finer than a medium meal. After a 45min 107F glucan rest the mash was rested at 145F for 1 hour. After cooling the converted liquid to 68F the SG was 1.055. This was subsequently added to a bourbon mash along with some 2-row.

At no time was the mash thick or gummy or syrupy. From this test I am wondering if the gummy, glucan-laden mash nightmares come from using raw rye, not malted.

This is most definitely malted.
My recipe:
6 gallon spring water
12# malted rye
2 Tbsp BA
2 Tbsp GA
2 Tbsp yeast
Adding the enzymes helps with the syrupy, dare I say slimy consistency, but not enough for me to not worry about scorching. So I added 1,5 gallons of water to wort, am about to finish 1st run, and samples "taste" of success.
Consistency makes it tough to check S.G.

That is exactly why I mashed my separately: I couldn't get my converted 'high rye' (17%) bourbon mash to give me enough clear on the top to measure SG. The step mash cured that.

Ive malted 100 lbs in the last month
Did a george washington and it never got slimy
My next run will be a 50 50 malted/unmalted
Got 2 gallons on oak from the first run
Will be mashing 90 lbs.
Hoping for 2 more gallon haven't done the math.
But the malted george washington is yummy
Alot less rye bite

grain is gummier, but still ok if prepped properly.
malt does have less spicy bite than grain and a smoother mouth feel
I finally quit drinking for good.

now i drink for evil.

I strip with a thumper on the grain.
I dont worry about texture
As long as it will go in the thumper
Good to go

Just water in the boiler?

I did 3 100% rye mashes and scorched two of them.
The disappointment motivated me to make a steam stripping setup.
The were all a very weird consistency, gooey like snot.
I haven't tried an all rye on the steam stripper but I had no trouble with a 35% malted rye bourbon.

Yup just water in the boiler.
Grain in all in the thumper.
Strip 10 gallons a shot
No presiing or filtering.
Idea comes from here truckinbutch or shineoncrazydiamond
I don't remember.
A thumper for me when doing all grain is an essential part of stripping
I would not go back to mop bucketing or trying to filtrr again

I'm hearing a little of both. Some have gooey rye malt mash and some don't. Some have scorched it and some haven't. Ok. More water, less grain? Also, I'm using a propane heater. Works great. Able to keep the heat adjusted. Wrong tool?

I do an all corn mash and want to strip on grain. I have a 15gal boiler and just got a 15 gal thumper with 1 inch intake and out put. Do I need to put a diffuser on the intake? I have a 4inch port so I can do something there. Worried about the grain clogging the pipe. I strip then run a spirit run
