40 gallon mash, large batch method:
50 lbs corn meal
55 lbs pale malt
10 lbs extra dark crystal
5 lbs crisp English chocolate malt
Osphaug Kveik yeast

Tomorrow will make 40 gal single malt, golden promise with above adjunct grains and yeast.

Distilling an OEG! Smelled powerful going in but it is not starting well.... odd odours in the lead jar. :-/

Rinsed and removed the stamens of every individual and immediately dropped them into some high proof spirit (still went brown). It was a fairly high ratio of flowers to spirit, but was still quite delicate and I used all of the mascerated spirit in the final gin.

I could have done a bigger batch if I had an extra pair of hands. Most of them ended up in tempura and used as an entrée for a thai curry.

My first malt is germinating! Hit 45% moisture after the 4th steep. Already about half the grains are chitting

I find it really effective. I wrap my garbage cans in that shiny bubble wrap stuff, works like a charm.

Scrapped my plan above for today and ran 110 lbs of Golden Promise through my mill and in to convert, just pitched the Kveik starter about 15 min ago. Now I wait...
next week should have 70ish gallons of bourbon and single malt to strip and gumball. Then on to another bourbon and a 100% peat malt run.

Trying some Booner's all corn. Man those liquid enzymes make it easy to work with, and the SG came in at 1.061 with nothing but cracked corn. I don't have any equipment to check pH either. I'd rather be lucky than good I guess. Just letting the yeasties do their thing now.

Last week I opened up my apple cider only to find a fungus typr crud was growing ontop of the wash so decided to chuck in my 4" pot still to strip, as it was a low ABV wash got just over 4 litre of low wines to 35%. Went and bought a couple of fuigi apples and used some herbs, let it macerate for 5 days giving it a good mix everyday and ran it yesterday.

Did the cut's this morning and put 2 litres of 65% on French Oak to age for a year or so.

Made a new 3/4 over 1/2 inch Liebig to go with my new 2 inch 3 foot column. Just need to make a RC and my new CCVM will be ready for the cleaning runs. May have gone a bit overboard with the length but it fits where I will use it. Might have to upgrade the boiler, I don't know if 1300 watts will drive it.

Finishing the OEG (...plus a bit) I was worried about the other day. +1 on all the adolations of this excellent, excellent process. It tastes great and smell even better!!!!!

It's in Missouri in the sticks. They spending 65000 in siding alone the rough in lumber costs 150000 they dont care about money

Stripped an AG wheated bourbon wash yesterday, and plan to do the spirits run today. 32 lbs cornmeal (ground feed corn), 12 lbs malted wheat, and 6 lbs malted barley gave me 13 gallons of wash @ 8.4%, which yielded 2.5 gallons of 40% low wines. From my experience so far (8 batches) I think this will net about 3 quarts of product at 125p.

My rye was ready for drying and kilning, so I made up a kiln. Tomorrow I’ll add the light fixtures for the heat, as well as the temperature controller.

My second batch of gin, in the style of OEG with less citrus and a couple other traditional botanicals added. I collected in the usual OEG quantities for the main body of the gin and then ran out the rest of the alcohol in small increments. I found a few jars that really added to the overall character and body of the batch.
