Sugar ferment done, but no alcohol smell / taste - HELP! :(

Post by Evil_Dark »

Hi Guys, done severals Sugar wash in the past. Done a plain ol' sugar wash recipe couples times with success.
This ferment was started the 28th december. Starting SG was 1.067. Made plenty of bubbles on the airlock.
Kept the ferment temp stable at 26.6-27 Celcius with a heating pad and a controller.
The final gravity is 0.990, so pretty dry!
BUT: I doesn't smell or taste alcohol AT ALL!!! Usually I can smell it instantly when I open the lid. But not this one...

The only thing I made different for this ferment is the usage of bakers yeast instead of DADY. (I wanted to experiment the taste difference if any)

So my question is: Is there any alcohol in this ferment, or another strain of bacteria just converted the sugars in something else?
Should I distill it anyway, or it's just a wasting time/energy?

It's the first time something like this happened to me (done 30+ ferments to date)

Thanks!

Hydrometer says it's done. Does it taste sour?
Run it.

Different yeast ... different fermentation results.

It tastes sour, yes! But absolutely no taste of alcohol... Ok I will run it to see! Interesting if it taste super nothing, it may give a tasteless spirit!

Fine? Hell... it may be your cleanest ferment yet.
