mashing corn in backset

Post by DBDub »

just curious since I havent seen anyone mention it, Is there anything wrong with cooking corn in backset vs adding it after cooking in water? It's already hot. save some time and money on LP.

Much more than 25% backset will drop the Ph too much. That said, backset should be used as part of the cooking water and not added as an afterthought.
