A gin in my newish 3l Copper Alembic, using double pot distilled sugar shine hearts. Nice result so far.
Harvested and dried lemon balm for this season's Absinthe.
5lb of Caraway Havarti cheese has gone into the cheese cave to dry before being waxed for aging.

Today I made blood come out my finger.
First time using a corn planer for peeling citrus. Was really happy with the results, right before I slipped up. Stopped my planned gin run and now I'm contemplating an early xmas morning run.

I'm in the process of making a yeast starter for a bourbon. Watching dry malt liquefy the geletenized corn is always fascinating to watch.

Its quite delicate, so I hope it sticks around and doesn't vanish out of the jar. Another 180mls or so to go..
If its any good, I'll have to wait again for next years harvest. Most of them went into salad and I wasn't a big fan. A handful got macerated, so if its any good, I'll use the lot for gin in future.

Are you using pot stilled sugar shine as your neutral for your gin maceration?

I got 2 barrels for Christmas. A 3L barrel from a friend and a 5 gallon barrel from my wife.
Filled the 3l barrel with high rye bourbon.
I Did a stripping run and a spirit run of chocolate bourbon to build up product for filling the 5 gallon barrel. On my gear it's going to take 2 spirit runs so I'm about half way there.
Very excited to be filling my first 5 gallon barrel soon!

Started 25 gallons of SCD's CROW bourbon this morning. About to go out and mill the malts to add in late tonight.corn meal and oats are currently being shredded by HT amylase. Yeah, I cheated. So what?

I put yeast on my first bourbon mash. I have 26 gallons of CROW Bourbon mash fermenting away at an SG of 1.072 (a bit higher than I anticipated for my first try at corn)
While it works I need to go get more paint strainer bags for the mop wringer.

Congrats on your first corn mash. Lotsa guys swear corn is a PITA, but once you do enuff of 'em they become second nature. Looking forward to your newmake assessments...

Well, I suppose it might be if you're buying whole and milling it, then trying to sparge it. Corn meal on the other hand, I cant imagine being any worse than my experience wiht all barley mashes.
