Brewed a batch of 'Golden Otter'. Mostly Golden Promise with a bit of Maris Otter.
If I ever invert the grain bill, I'll have to call it Maris Promise.

I finally filled my barrel.

I did end up waxing the heads. It's in the garage for now.
I'm supposed to be taking a break for a while but I ordered a 5 gallon bucket of blackstrap molasses from ebay. $70 including shipping.

A mess. Had just over 15 gallons of cleared Hbb in the boiler and 9 gallons of the grain slurry in the thumper. Was just getting some heat to the thumper when I noticed I was no longer hearing a steady glug glug. Right when I was turning power down what I think was a plugged thumper inlet let loose. This resulted in a violent flash boil and then puke. Killed power to everything with the flip of two switches on my way out of the room. Spewed out about 5 or 6 gallons.

Low key day. Spent time cleaning the shop and running All Bran wash.
If in doubt leave it out.

Simple Lil' Pot Still, no temp guage, no carbon, no scrubbers, nuthin' fancy. Sometimes use a thumper, sometimes don't.

40 gallons ferment of a high oat bourbon recipe, of which I already have 2 gallons aging on oak I charred and toasted from a used wine barrel from Lowe's.
Followed a hybrid of Booner's casual,
(42 pounds corn (feed grade)
30 pounds oats (feed grade)
9 lbs rye)
except I had whole kernal corn and had to blend 42 pounds before I could grind it. Took me 4 hours and three trailer park boys movies. Good times.
Split into 2 batches for 24 gallon wine buckets.
21 pounds corn in each, 8.5 gallons water, Ph'd water with citric acid to 7 before adding to corn at 200°F, added high temp alpha.
A few hours later added gluco. That was split into two HD 10 gallon igloos.
This morning, pulled iodine and gravity, came in at 1.072 or about 9.25% potential. Not sure how that equates but I'm guessing about 7% when brought to 10 gallons.
After I transferred corn mash to fermenters, I added 8 gallons 160°F water to 15lbs oats and 4.5 lbs rye with alpha and currently steeping each in same HD coolers. Currently awaiting to transfer in an hour and take a gravity reading once I add water to top off fermenters.
I'm hoping I can fill my 7 gallon fermenter with the two gallons already at 60%, and I'm hoping I can get close to 5 gallons double run with this. Might have to make another 20 gallon ferment, to I dunno

Tested 4 different hydrometers, at 85°F, all four are calibrated at 60°F, read 1.050.
With adjustment, ought to be 1.053, so right near 7%, or right at, if it ferments out to .998 which I've had happen before.
I did the iodine test and wanted to provide photos (used pixel lab to downsize photo but I guess 1.2 MB is still way too big) to verify I'm seeing things accurately. After a minute or two it's nearly impossible to discern, with maybe a slight hair off purple tint.

A mess to clean up tomorrow by trimming a hedge. I found a lot of very nice wormwood flowers while clipping the hedge, so they've been hung out to dry for this years Absinthe.

Racked off my SCD CROW Bourbon.... SG 1.0 but alot of the liquid seems to be locked into corn "sludge" ??

Busy day.
Put up 70 l of a 4 grain AG mash this morning of 60% unmalted rye, 30% corn, 20% malted barley, 10% millet. I know that adds up to more than 100%, but it was a big mash.
Did a slow and long stripping run of a 50% rye, 30% corn, 20% barley AG whiskey. Collected down to 10%
Finally, did cuts on a millet whiskey this evening.
I really like rye, but i seem to get an allergic reaction working with the grain. I wear my covid mask whenever I work with it - doesn't really seem to help. Anybody else have this issue with rye?

5 gallons of blueberry wine. Been racked for a month. Crystal clear. Vintner's Best isn't that great aroma but ok taste. Added 2.5 cups and guy the sweetness just under where I want, which I hear is his it should be fine as it gets a little sweeter with time.
Ordered 8oz olive nation TTB blueberry extract and will add 1/2 tsp to a gallon, test, and determine if it helps and exactly the sweet spot.
Going to rack my gallon of hard cider into the bottling bucket, add some mango TTB extract, a little sugar, and bottle for 5 days before placing in fridge.
Might bottle 9 gallons of sweetfeed into clear free wine bottles I got, but the caps won't be here till tomorrow so maybe tomorrow

One gallon mango hard cider was amazing with one tsp TTB extract. Half cup brown sugar dissolved, 1/4 cup table sugar. Bottled.
Five days will refrigerate for drinking do it stays sweet with since effervescence.
Then I started one gallon hard seltzer with one pound inverted sugar, tsp nutrients, added on to yeast bed of apple cider

My all grain all malted my self oats larger is quietly settling and finishing in the 50 degree basement. My all rice amyzaki wine is just starting to slow down from its furious 75 degree red star blanc ferment and probably needs to be moved to a carboy. And my all grain malted my self corn mash is just about done doing its conversion.

Currently stripping the 2nd charge of CROW bourbon. About 3.5 hours per charge. Flame on, to recharged on the first charge. About a gallon into the 2nd charge now. I should end up with 5 gallons of low wines at 30%, then I'm adding liquid oak tannins, and resting for a week or three before I spirit run this batch.
