did 2 more stripping runs today, and then the spirit run.
Sprit run started with 5.6 gallons @ 39%. Collected 12L across 30 jars. Will do cuts tomorrow.
I recorded the % and temp from top of the column every 1L collected, makes an interesting graph:

On my new Kegland reflux column (underneath which I added a 24" SS spool with 2 rolls of copper mesh), I ran a small batch (mostly as an experimental run to see how this still head works) of ~1.5 gal of stripped oxidized wine @ 38%.

Pulled off ~2L of 95% (tested on 2 different alcometers, because I was skeptical!!!). The last 250 mL I saw the head temp rising & offtake slowing, and it had dropped to 72%, so shut it down.

Everything is airing out under coffee filters now (mostly 150 mL jars + a couple 250 mL's).

This was my very first run of reflux after the cleaning runs, so very excited to see how it turns out!!!

Four stripping runs of the annual brandy from our grapes. The average ABVs of the Low Wines is around 27%. I might do the spirit run tomorrow.

The pomace has been put back into the fermenter with sugar, but no backset, to make a lightly grape flavored base spirit for Gin, Absinthe, Ouzo and anything else that might benefit from a hint of grape.

Racked a squeezed a 25 gallon bourbon mash. I got 11 gallons of clear and about another 12.5 of cloudy shit to clear, and froze the squeezins for a sugarhead later. No time to do it right now.

Now I'm sitting here after a few samples of my SSS, SPD, and BPD, enjoying a nice little buzz and its only 230. He'll, I may get drunk twice today. 🤪 that's a good weekend!

I thought about getting both fermenters going, one with a sugar head, and one with another bourbon mash, but I dont have enough buckets to store all that distillers beer until I can run it all.

It took me about 2.5 hours to squeeze 50# of grains. I recovered all but about 2 gallons from a 25 gallon mash. Squeezing corn is a labor of love.

I finally mashed my last bag of corn and when it is done I am going to have to decide what to make next but I am leaning towards rum just to see if I can make something drinkable because I don't like any of the store stuff I have tried.
I think this mash is going to be much more productive than my last few. I heated the corn to 205 this time and it gelled more than I have seen before. I think I might break my 6% record and get more than a gallon of cuts. At least I can be hopeful. :D

Spirit run of my annual grape brandy. Buggered if I know how I'm going to get the cuts right. The shed smells like the family of rats I've been trying to poison has died under the floorboards. :(

They've been raiding our food scraps from the compost. I've just poured a bucket of backset down a hole that looks suspiciously like it leads to a rat's nest.

Cuts are done. I had to take the samples outside and also away from a vine with fermenting grapes still on it. :D

Installed cabinets in my brewery/distillery place at home, started organizing the chaos. Hopefully I'll have a super cool place to work in, soon.

I ran my recently acquired copper alembic today, using a Gin botanical bill that I've used before. The finished product looks more like a bottle of milk than a bottle of gin at 46% :D It makes a far more robust G&T than you will get with commercial gins, but we both like that. I'll be able to tone it down a bit when I get around to making some neutral.
