Well, 6 months ago the HBS did a sale. $10 for 10 pounds of left overs from milling. Guaranteed to ferment, at least 60 pct malts. I’m sittin’ here sippin’ some of the finest all grain I’ve made. Damn it’s good...wish ta hell i knew what it was! Call it “Question Mark Whiskey”.

Run #2 of my home Cousin's process attempt. These first 2 rum washes have sat in non-airtight containers since late September, they smell crazy but it's a lower than expected yield due to alcohol loss over time. The next 3-4 should be normal.

Got up early, and helped the brothers strip all the carpet out of the lodge room in preparation for new carpet and tile. Like so many lodges these days, since we cant meet, or rent the lodges out, it's a good time to make renovations. Now I'm stripping the first half of my 4th batch of single malt.

Using up my leftover Bairds Heavy Peat Malt (65%) with some leftover unpeated grains. Whole garage smells like Bacon and I'm not mad at it. I am hungry though...

Heavily peated spirit run. Good yield, but fermentation went a little too quick, so character is a little bit average. Have had a few hot nights and the yeast have taken advantage.

Spirit run of Angel Starter of Liqour Making. Pre-used UJSSM corn plus new rolled barley. Very nice so far. Should be even better with age.

Black Sambuca using essence purchased from a HBS. I didn't buy all the extras the HBS owner offered me to go with it and made my own simple syrup so that I got the sugar ratio correct. Very nice. It might be over twenty years ago that that I last made Sambuca with a HBS essence :D

Stripping another Special K bourbon. This is the 3rd (of 3 ferments) for the low wines. Finally, getting ready for another spirit run of bourbon. Then, wait for it to age. But...finally.

Not made yet, but the parts finally arrived!

The boiler is a bull specimen flask, works out to about 15-16 gallons and came with a nice internal chamber I’ll find a use for.

I had about 2 cups worth of leftover neutral -- threw in a handful of Anise seeds...broke them up to get the flavor out of them... will add a simple syrup afterwards... hoping to make some sort of OUZO type of drink.... If not, into the sink it goes....not a big loss

Stripping a 65% peated single malt. Possible lacto started or the yeast didn't fall out of suspension. Its the cloudiest I've ever run.

I'm running more in the preheater than the boiler, because last time, the preheater puked with the same volume in both. Hoping the extra 5L in the preheater will mean I don't have it heating up to production temperature before the strip is finished.

Single malt spirit run.
65% Baird's Heavily Peated. 29% NZ Pale malt. 6% Gladfield's Aurora. 'Foreshots and Feints' from my last 100% peated run.

Less charcoal peat aroma for sure, but also a lot more interesting. Getting some nice chocolate/coffee from the specialty malt.

Bottled 3l of limoncello, 700ml of Blueberry whatever you want to call it but it was 42% and sweetened, and 1l of raspberry vodka that turned out a lot better than I was expecting!

My sister in law to be helped to taste them all plus a blueberry vodka I was experimenting with and she was legless!

By the way, I had a little helper watching me, see if you can spot him in the picture.
Taking a break while I get a new still completed....
