I ran the Pugirum I had fermented, and it’s fantastic. Buttery, smooth, with a hint of molasses. I hadn’t made it in a long time, and the boiler puked the last time. I ran it slow this time, and it came out clear. It’s ready just in time for sharing with the family at Christmas!

Raw cherry, charred oak, various toast oaks, used bourbon oak, used wine oak, and raw apple.
Trying to see how long I can keep these jars in the 150*F water bath and what if any benefit other than oak tea. Coming up on three days and i think i’ll do it again for “quick drinkers” while the other stuff sits in a barrel. A week in the hot tub? Two weeks? We’ll see but i’ve got just over a gallon of white barrel cut to blend these down and stick on the shelf for the meantime.
Right now I’m enjoying these blended equal parts with the white barrel cut then proofed to 45’ish abv. Maybe a little light still at that point but good depth and flavour.
I’ll blend and put these on the shelf soon with some larger sticks to set up and meld.

4 days ago i started a
Barley, caramel malt and oatmeal
6 kgs pale roast barley (not malted) - ground into flour in blender
1 kg caramel malt
1 kg oatmeal - cooked until gluey
used enzymes in 21L water
OG as 1.08
added 2 kgs dextrose and 15L water
OG now 1.064 and 50L barrel filled to 40L mark
checked yesterday - FG = 0.994 - 9.1% ABV
Drained and squeezed the grains (in a fruit press) - got 28L for the boiler (currently being stripped at 2L per hour)
put all the grains back into the same barrel without cleaning it, added 5KG sugar and 2 KG dextrose and 37L water - barrel filled to 43L mark
stirred really well with paint mixer
did not add yeast - and this morning it is going strong!

Hand cranked 37 pounds of whole corn in my grist mill in preparation for a new whiskey. The temps are expected to drop below freezing on Sunday for a few days, so I'll be putting the mash off a few days.

I finally finished my big run of an HBB like recipe. Perfect timing. I got a barrel for Christmas and was able to fill it tonight.
The whole run was two fermentations, about 35 gallons of water and 75#s of grain each. I got about 7.5 gallons of likker at 124p. 5.5 went in to the barrel, 1 for topping up and the other gallons fate has not been determined yet. Theres also about 3 gallons of feints that I'll probably use in a reflux run at some point.
Corn, oats, white wheat malt, honey malt, and be-265 yeast.
This is my second barrel. The first one was filled with chocolate bourbon, it's going on about 10 months or so now.
I don't think I'll be buying any more barrels. They're cool to have but that's a lot of likker...

A couple of temperature controllers. I'd lent one to another distiller and it hasn't come back in time for our summer temperatures and it was the only spare I had that could control cooling as well as heating.

It was a heck of a boxing day.
8 kg cracked corn- boiled for 2 hours in 2 seperate settings (only 1 x 20 litre pot)
25kg Malted barley 8 seperate boils with 12 liters of water each time.
I ended up with about 75 liters of wort wich is fermenting now with SAF Spirit M-1 whiskey yeast.

I got most of it cleaned up last night but some of the grains on the side have dried hard and are pretty sticky... Thought there was good headspace but this stuff really took off - I hope that makes it taste better lol!

An Angel Yellow Label COB whiskey. 45% cracked yellow dent corn, 45% rolled barley and 10% rolled oats, all feed grains from Peavy Mart. It was a small batch processed through a knock-off air still operating on a power controller (fan plugged in separately to run at full speed). Yielded about 1.5L at 59% ABV, resting on a small piece of used toasted and charred white oak.

That happened to me with my last ferment also. First time ever! I was using Yellow Angel and 100% rye/pumpernickel meal I bought from Restaurant Store. I guess it was because it was ground so fine??? I used 100% corn meal previously with same amount of headspace & no issues. Weird they differed so much...

Just squeezed my third and final batch of HBB. It's cold crashing in the shed and with luck I'll strip it before the new year. Then I'll just need to find the time for the spirit run.

Mashing today. 74% Corn grist milled, then through the roller mill, 21% Rye Malt, and 5% Marris Otter. SafAle T-58 yeast hoping to pull something a little more interesting with this yeast than what Ive been getting with US-05.

Life got in the way & I didn't make cuts on 5 gal of sugarhead Irish Whisky that I'd run on Sunday until tonight. I'd added in 1 gal of feints from the all-grain run plus another gallon of water to get total charge of 7 gal @ just under 40%.
To date, this has been my largest hearts cut of any batch. Lesson to all the newbies out there (of which I still consider myself one): quality over quantity, but the former is drastically helped when you run it correctly. SCR controller for the win...

Stripping honey shine #3 and spiriting honey shine low wines and feints that have been on charred oak for a couple months. One more melter ferment in this series and I think i’ll add a bit more straight honey to it to get a little extra for spirit run top up on the last five small batch spirit runs i’ll be doing. Gonna stretch it out a dew more months to spread the solera cycle over close to a year. It’s a special spirit for me so only sip in every so often.

Pitched yeast this morning on yesterday's mash. I got a respectable 1.069 from TSC feed corn, malted rye, and Marris Otter, at 2 pounds per gallon using Ferm Solutions enzymes. 74% corn 21% Rye, and 5% Barley.
