I've got a large batch of Rum. 50 gallon. I'll attempt to hit 10% abv.
10 gallons Blackstrap. 25# sugar. I hope that's close.
Bread yeast/lalvin 1118 and B vitamins.
Also same size batch of post oak smoked 50% oat whiskey with feed wheat.

Neutral run! All balanced up and First jar smells soooo clean @96%
This one is special: I am getting my elderly dad next week (he lives far away) and he's never seen how I make Gin So I'm just getting ready for a Gin run next week.

Made a SBB All molasses rum again.
This time I used my 5 litres of dunder from the last run.
I'm following the recipe exactly but used a little more bakers this time. He says good handful so not sure how big his hands are, but I went 50 grams this time. Hope it's not too much.its been sitting only a month now on oak and I'm very happy with what I've sipped. Also did my 4th TFF vodka. This stuff is like clock work, every 4 or 5 days it's ready. I collect about 4 litres each strip run (collecting from about 65% down to 20%)and will be doing my spirit run soon.
Can't thank everyone enough for all the help and guidance. I'm supper pumped.

Couldn't find sweet feed in Australia so I did my take on sweet feed AG with angel yeast.

I finished my first AG vodka run.
It came out pretty good.
I actually sat and drank some neat.
Oats, corn and wheat malt with bread yeast.
Flavor wise it's neutral, to my barbarian palate anyways.
Maybe a little sweet?
It is pretty leggy, that's weird for vodka right?

A small batch of Strawberry mash. Started with decent headspace in the jug (or so I thought). By the end of the day I was running out of room. I gingerly moved it to the bathtub envisioning a very sudden end to my breathing at the hands of SWMBO. Overnight it calmed back down and is just doing it's thing now.

Squeezed the grains from two batches of Yellow Label wheat. Currently cold crashing in the shed and with luck I'll be able to strip them in a day or two.

I have not! Lol. More than happy to share. Super basic. 6lbs of frozen strawberries. The ol' "perfectly imperfect" no name stuff. Let them thaw in a big bowl. I put them in the fridge for about a day or so. There was liquid collected at the bottom, so all of that went into the blender, chunky even mass of strawberries and juice. Chuck it into the fermenter. Heat a gallon of water to about 90f and dump in 5lbs of sugar. Once it dissolves dump that in the fermenter. Top off with water total about 4.5-5 gallons. I used my well water. It's good I think? Then make a yeast starter. I just used red star bread yeast..8g packet with 1/2 tsp sugar dissolved in warm water. Let it sit for 10min covered. Once water is at like 70f, dump in the yeast. Seal it. Shake the piss out of it until you want to pass out. Throw on the airlock and watch it like a hawk. Did a spirit run on my latest batch (#16) yesterday: a single malt whisky.
I had brewed a Scottish Ale (for beer, not whisky) in early January, and I washed and saved the yeast (Wyeast 1728 Scottish Ale).
I then did 2 mashes on 1/24:
11.3 kg (25 lb) pale malt
2.2 kg (5 lb) vienna malt
2.2 kg (5 lb) munich malt
2.2 kg (5 lb) peated malt
2.2 kg (5 lb) distillers malt
Mashed at 64C (147F) and netted 80 L (21 gal) from each with an OG of 1.057. Pitched about 250ml of yeast slurry into each 112 L (30 gal) fermenter (at 19C), and in 45 hours it was down to 1.002, finishing a few days later at 1.000 for 7.5% ABV. For the record, my Scottish Ale started at 1.058 and finished at 1.012, mashed at 67C (153F) .
I did 3 stripping runs on 2/3 yielding about 33 L (8.7 gal) low wines @ 28.5%. I added 3 L of single malt feints (60%) and 4 L of reserved wash to total 40 L of single malt low wines for my spirit run. I ran this maybe 50% faster than my usual spirit runs ... about 2.5 L per hour. Collected 32 jars, 450 ml each, which are airing out right now. Hope to net over 8L at 125p with tight cuts. I've got a twice used 5L barrel to fill, and will have plenty of new make to keep it topped up.

made a 4.5 ft liebig condenser, 3/4" over 1/2" - put a copper wire spiraled around the outside of the 1/2" as some recommended here. Did my cleaning runs and a first stripping run with it and must say it is working fine.

Got some apples mashed in. 15lbs of apples blended, 2.5lbs of melted brown sugar, 2 liters of pure apple juice, some well water and some red star. Never tried it before but it's bubbling away in my bucket.
