Can I ask if you rehydrate all yeast together at same time?Dancing4dan wrote: ↑Sat Mar 26, 2022 9:56 am 80lb. Golden Graham malt
10 lb rolled oats
35 gallons hot tap water
Mix in two fermenters WITH BIAB. Around 125*F
Long mash rest for enzymes to work while we visit some relatives.
Will pitch a combination of rehydrated Fleishman’s, DADY, and small amount of Yellow Label. As the ferment progresses the different yeast each have slightly different abilities to ferment as their environment changes.
If all goes well this will be strip and spirit run through my pot still.

Re: What'd ya'll make today?
I re-run my neutral last week on my CCVM with more packing and a sight glass, and I did get 95%+ out of it, with less flavor carried over than my first run (93%). I use ceramic pool filter media as my packing, and by crushing it I was able to get 40% more packing in the same space.
For my latest version of OEG (batch 9) I mixed up 2L of 43% and added my crushed botanicals (40g Juniper, 8g Coriander, 1g Orris, 1g Angelica, 2g dried lemon peel, 4 g dried lime peel) for 2 days.
I ran it yesterday and added the entire peel of a small orange in the vapor path (white pith removed). Collected 800 ml, and proofed down to 1.5L @ 43%. It was quite tasty and very orange-forward, but really cloudy, probably due to the citrus oils. Although that doesn't bother me, I was going to gift a bottle to a friend and wanted it to look good. So I made up some more 43% neutral and blended the two together until the cloudiness cleared up ... it took about 1.2L to do so, so I ended up with almost 3 liters of a very nice Gin.

Made some labels for my golden pepper whiskey to give to some friends. They were worried about getting caught with it so I made it look legit at a glance.

It's actually 2- 23 litre batches.
But I'm gathering my supplies needed to start making 1 big batch.
This stuff is great for infusion with fruit

I made my first AG mash.
5lb 2 row rye and 5lb barley.
This might not be a good combo ,ratio but I need some experience with how these grains taste and my success at mashing.

Trying on grain till I learn more about lautering and such. I guess I'll just see what this produces and go from there. I'll definitely be trying the lautering technique down the road. I wanna make sure my mashing is correct first.jonnys_spirit wrote: ↑Tue Mar 29, 2022 7:53 amCongratulations on your first AG! Re: What'd ya'll make today?
I found a couple of demijohns of what I had named Rum Grappa today. They were made up using rum feints, dunder, a tiny amount of botanicals, lime salts and any other trickery I was aware of at the time, including fast ageing. Ages noted on the jars range from 2015 to 2020 and the demijohns contain much of the wood from the heart cut demijohns that have been emptied in that time.
I've made up a sample blend and flavored and colored it with my caramel and dunder essences and it's surprisingly good, both as a sipper and with Coke, considering it's made mostly from my discards.

First time I've heard of doing that, and it sounds like a good idea.
Ya need to start a new topic about crushed media in the Column Builds section.

I use ceramic pool filter media as my packing
Found them on the interweb for $25 Australian per kg.
Another, $120 for 10 kg.
There were also ceramic balls of various sizes which could be interesting
(an alternative to marbles maybe and could be cheaper and maybe lighter.)
(And may not need smashing.)

Re: What'd ya'll make today?
Not sure if it counts as an AG, but I'm currently distilling second run of my sour whiskey mash. First mash was made with barley and sugar added, but didn't have enough flavor. Threw the left over squished barley back in the fermenter and added a bit more than double the amount and no sugar this time. The result was way better and gives me the opportunity to blend the two kinds of whiskey till I hit the sweet spot.
Then I've been toasting some apple wood chips for an experiment where I'm gonna use oak in one jar and apple wood in another, and compare the taste profiles by the end.
Hope you have a nice Wednesday all of you!

Re: What'd ya'll make today?
I'm stripping 5 gallons red wine for brandy.
Last time was once through the pot slow, this time time I'll try a strip and spirit to see the difference.if any?
I'll edit incase anyone's interested in what I did.
Took 40 dollar wine kit 1.09 gravity at start .996ish at end. I collected "roughly" 7 litres from 60ish ABV down to 28ish ABV to fill last jar.
Easy to see the difference as the cloudy tails sets in.

That sounds like an interesting mash, would it have taste of oatmeal if it's not run through a column? Or is it primary for nutrients and enzymes that you use oatmeal?

Re: What'd ya'll make today?
No real flavour, but it smooths out the output.
Also busy mashing in (split across 3 fermenters), with 6KG Oatmeal, 30 kgs of really fine milled corn, enzymes (A & B) - total mash 140 L
Been using oatmeal for the last 5 or so mashes with grains - and i don't need nutrients, PH+ PH- etc.

Re: What'd ya'll make today?
Thanks for the answer! I'm still new in this so I was wondering whether it was for flavor or for something else but did think that it wouldn't leave much flavor with that ratio. I might try that mash when I have some space. My buckets are full of apple brandy and sugar wash with a little backset from my banana brandy at this moment and a single bucket of potato vodka mash as well that really don't smell well I think it have something to do with the 900g of potato chips I added that I had that was over expiration date.. I used 8kg of potato's, 2,5kg malted barley and then 900g of chips that I rinsed multiple times and threw in with the potato's and barley to a total volume of 25L. Hopefully it will turn out better than it smells at this moment haha.

Made a liebig condenser from leftover copper pipes lying around in the basement making the central heating system when bulding the house three years ago.
22mm in 28mm with a turbulator helix in the gap between the pipes from 2,5mm² electrical wire. It is a very snug fit.
Water connections are made with 3/4" red brass fittings for hose fittings.
On top is a union from red brass that i covered with a tin copper alloy to protect the red brass (lead free) from the vapor.
the distillate end of the condenser will get some kind of bayonet lock to connect a long outlet pipe or a parrot that i have to make next weekend. Sorry for the picture quality. My phone camera seems to got bashed one time too often.
And a 40 liter rum wash bubbles away merrily since the morning.

Re: What'd ya'll make today?
Cheesecake...
And I squeezed the third and final batch of my chocolate bourbon and started a sugarhead on the grains. I milled the grains a little finer this time and I feel that in addition to a higher OG it was easier to squeeze. It's possible that that leaves less flavour available for the sugarhead. We'll see (although not right away as I realised the other day that I don't have enough demi-johns to store the low wines from both the AG and the sugarhead, so the final two sugarhead batches are going to have to wait until I can do the spirit run on the AG!)

Spirit run for two batches of TFFV. I plan to take quite a large heads cut and switch over to tails quite early while still running 94%, to see just how clean a product the FFV can give.
I am happy to make these cuts as I also have 5l of TPW low wines that the feints can go in with for another spirit run.
