I just read an article http://news.sciencemag.org/technology/2 ... -you-drunk about fermenting coffee grounds. I cant imagine that it would be too tasty unless you are a big fan of coffee but some you you might find this interesting.

"the scientists first collected this raw material from a Portuguese coffee roasting company and dried it. Then they heated the powder in water at 163°C for 45 minutes, separated out the liquid, and added sugar. Next, the team mixed in yeast cells, let the concoction ferment, and concentrated the sample to get a higher alcohol content. (A similar process is used to produce other distilled beverages such as whiskey and rum from wheat and molasses.) And voilà! Used coffee grounds produced a new alcoholic beverage with 40% ethanol,"

Interesting article (I love coffee and booze), but they're not really fermenting coffee grounds:
The scientists first collected this raw material from a Portuguese coffee roasting company and dried it. Then they heated the powder in water at 163°C for 45 minutes, separated out the liquid, and added sugar


More likely they're fermenting sugar with coffee grounds for yeast nutrient/flavour.

coffee is so low in food value that you mite as well say its zip..

I also agree it is mostly for the flavor. I was surprised to find there was such an interest in experimenting with unconventional materials for fermenting and that they were so open with the process. I wonder what else I throw away can be re-purposed to add flavors, I might really get into recycling :D

some of this food in the raw is down right disgusting . how anybody learned to cook it and drink or eat it i have no idea.it seams as a cave man if you ate something and it did not taste good ,made you sick or even killed you you would never touch it again." if I cook this maybe it wont kill me" HAY George you want to try this??

Sorry to necro an old thread but coffee grounds once used DO have extremely fermentable sugars in them. The sugars aren't fermentable until the grounds are 'processed'. I have done 2 batches now with them and they both have turned out amazingly.

I'd also like to know this "process" because I end up with a shitload of coffee grounds around here... I have 4 or 5 large plastic coffee canisters full of used grounds as I type this...

Edited to add: Upon doing some research it appears that the coffee grounds are used for nutrient and taste values only... Coffee grounds, sugar, water, and yeast...

Hmmm... used coffee grounds. The rarest most expensive coffee is civet coffee. Which is made from the shit of a cat like creature that eats coffee berries. I wonder what you could make if you force fed the neighbor cat say 30 or 40 lbs of coffee gounds? Probably too much trouble to do cuz I think you'd have to ferment the shit out of it.

Roasted barley malt produces a really nice coffee taste, for what it's worth.

Yeah, right. That is never going to happen in any pressure cooker your average home distiller is going to own.

Putting coffee grounds in a gin basket over some neutral might be worth trying though.
