Incomplete Starch conversion

Hello,
I wanted to try George Washington's Rye Whiskey Recipe:
6 lbs flaked rye.
3 1/2 ponds flaked maize
1/2 lb malted barley ground
1 tsp gypsum
acid blend adjust ph
5 gallons water

Then heat to 165 F without the malted barley stir and cool to 152, add malted barley
cool mash to 149 f cover pot allow mixture to rest 90 minutes for starch conversion to sugars.
cool to 76 f, then add yeast.
Problem is I heated the mash too high a temp, darn probe gave incorrect temp.
It went to 190 f, destroying the enzymes for starch conversion to sugars. I checked next morning with iodine test, sample turned dark blue.
So now I have this mash with unconverted starches,
What can I do to save this mash? Should I just add like 10 lbs of sugar to ferment this or what choices do I have.

Appreciate your help with this.

Overheating to 190 shouldn't matter as long as malt isn't added until the temp is down to 152. Also 1/2# of malt isn't enough to convert that much grain. Generally you need a pound of 6 row malt for every 5 pounds of grain.

1/2 lb of malt to 9 1/2 lbs unmalted ain't enough to convert that much grain. Add more malt another 2 lbs. Or add powdered enzymes.

Ok, well the mash has cooled So should I reheat to 152 or so and add malt ? or enzymes>

Yes warm it back up. And add the new malt. Make sure you have 30 DP per pound of total grain. Usually 20% of the grain bill should be malt. Depending on the DP of the malt.

Hey Prairie Piss!
I was able to get 2 row barley, and had it ground, So based on the following
How much should I add? and what is DP where you stated , make sure you have 30 DP /lb of total grain,

7 lbs flaked rye.
4.0 pounds flaked maize
1 lb malted barley ground
1 tsp gypsum
acid blend adjust ph
7 gallons water

At least 2 pounds of matled barley. Maybe trade that extra pound of malted barley for 1 pound less in corn!
