Sorry for the time delay on this. It was my fault. I don't have the audio software to do the editing needed. Luckily for met OtisT helped me out and did all the work. He edited everything and cut them up into smaller chunks. I owe him a lot for the help. It was pretty informative. I hope you enjoy & learn something from it. This is debatable. We run a sweet mash process at our distillery and we get wonderful aromas. Our aging whiskies are also first class, so we know you can accomplish an exceptional ester profile without sour mash or muck. Having said that, either of those would contain organic acids (lactic, acetic, etc) that are precursors to esters. Also lower pH can drive ester production, so another thing to consider. If either sour mash or much contributed wild yeast or contaminating bacteria, that would be another way it would influence ester and other chemical production.
I have never heard the term "muck". What is that?

Short: In the "old days" this is the hole where Rum distillers would dump the contents of the still. With every ferment they would take some and throw it in the wash. Like dunder on steroids. It's still in use today but mostly for non-beverage rums (like flavoring or cologne).

Yes. I changed the share settings so you should not need to request access anymore. It looks like you need to be logged into Gmail to access it. I will try to remove that requirement so anyone with the link should be able to get it without logging in.

I’ve been digging in and Lear all I can about the science aspect as well as the art. Thanks for sharing these. I’ve been reading everything I can, and am looking forward to some alone time to do the listening as well! Thanks for this!
