Subject says it all.
Ive noticed ferments ive left sitting that have collected alot of dead fruit flies dont go to vinegar when the ouster shell bag is left in them. They are all lacto infected af tho so i reckon that could keep acterbacter down....
Just kinda considering.

If the bacteria are there they are making acetic acid but the oyster shell would be neutralizing the acid. So the infection is eating alcohol and making "vinegar" but the oyster shells are neutralizing the vinegar as fast as it is created.
Not keeping the bacteria down but preventing the build up of acid.

I'm guessing leaving the shell grit in too long after fermentation is complete, increases the odds of a bacterial infection.
Bacterial doesn't like a low acidic pH. The oyster shell might raise the pH up enough for bacteria to start growing.
