Ujssm yeast...bugger!

Post by Sonofodin »

Guys and girls, sorry if this has been covered before but couldn't find a thread. So in my infinite stupidity I just got going on 2nd gen ujssm. All going great, percentage of corn switched out, check, 2 litres water in to keep yeast happy, check, stripping run, check, backset in, check, water and sugar in, check, temp good, check, pitched more yeast...wait...what? Oh arse, no need to pitch again!!! School boy error. She's bubbling away a gooden after half hour of sealing her up. Only used 2 tablespoons bakers extra in a 45 litre batch. Have I messed it up beyond all belief. I'm guessing off flavours etc etc??

It'll be fine... Ferment it and run it!

Cheers,

Assuming it was the same yeast it will be fine. Even if different it should be fine, just perhaps a change of character if a different yeast dominated. It is not as if you had measured exactly the residual yeast you were pitching onto. So what is a little more?

dont over think stuff. worry if your ambient temp is too cold, if your sg is too high, if your pitch temp was too high, if you did not airiate enough, of your ph go too low... or start too high... . relax a bit and focus on your cuts... yes, a good ferment will help a lot but extra yeast will not worry a ferment.
