FWIW, Fred Minnick has cameras showing live a fermentation at Rabbit Hole Distillery in Louisville.
Don't know where he's going with it, but it's a "Chocolate Malt" whiskey fermentation.

I might wake the wife up if I watch the video. It looks yummy in the thumbnail though. They use some chocolate malt in their brews. So does Corsair. It doesn't take much an who doesn't like a hint of chocolate in their top shelf bourbon!

I did a chocolate malt a while ago. Very strong chocolate aroma and flavour present while mashing all the way through stripping and spirit runs. It was aged on some Marsala infused oak. Works great when added in a SMALL amount to a finished whiskey that needs a little flavour boost. Works good as an addition to a finished corn based whiskey.
