Hi guys
Just a quick one, I am thinking of starting a rum and have some ujssm backset which I froze amd some single malt (barley) backset from and single malt whiskey I ran in a fermenter. I have a lacto infection in the malted backset. Question is can I use it as "Dunder" for my first rum run?

That's exactly what I did. I made a dunder pit from bourbon backset and a little molasses and left it to stew for about a month before making my rum wash with it. After stripping the rum I replaced the whisky dunder with backset from the run without cleaning the bucket to let the infections keep a hold.

I've used fresh backset from whiskey, called it rumsky and kept it separate from the next rum. Turned out nice.
