260 lbs of rye.what would you do

Post by dukethebeagle120 »

I recently aquired 260 lbs of rye seed
I got 55 lbs of it malted
What would you do with it
I was thinking 100% rye with 20% malted.
But my last high rye was 70% malt rye and 30% corn
Needless to say it turned out very good.
I really like malted rye but doing a large batch would mean at least 90 lbs of rye malt
Ayayay.
So what you think

I'd have to make a batch of George Washington Rye.

High-rye bourbon.
Low-rye bourbon.
Rye brownies.
I hear rye vodka is to die for.😁

Sounds like more rye than you can store. My suggestion is to keep half of it to make rye whiskey my favorite and then send the rest to me :sarcasm:

heat 250 g of mid to fine milled rye malt per 750 g of water +pinch of citric acid (1g/100l) to 160*F add hi-temp enzyme hold for 90 minutes, cooling naturally to 149*, add saccrification enzyme, cool naturally for 90 minutes, add 250g of water/unit to cool to 90-95*F and pitch yeast. (total volume of grain to water when done should be 250g grain to 1000g (1 litre) of water.)
*mix continuously*

you have enough there for 500L of mash, some 25L of finished cask strength plus feints.
I finally quit drinking for good.

I'd probably do 75/25 to try to cut a little of the astringency from the raw Rye.

Depends on what kind of rye (the spirit style, not the grain) you're talking about. For rye drinkers, corn in a rye grain bill introduces a neutral sweetness that 'dilutes' the rye signature. For bourbon drinkers, increasing percentages of rye introduce a spicy element to the classic sweet corn base. Regardless of the percentages of the main players in a grain bill, it will take a few variations to determine exactly what they do for you. Every palette is different, but as a home distiller, the beauty lies in the opportunity to test, and retest, to get that 'just right' tipple that you just can't buy.

Here's a list of different styles of rye, and how you could 'tweak' whatever style you want to start with.

i do 100% malt. partly for that reason, but mostly it's easier less heat less work, and apparently living in the middle of grain fields in Alberta has yet another benefit...cheap grain/malt! who'da thunk?

100% rye whiskey is a bit of an oddity here in Canuckistan.
Most of the things we generally call Rye have wheat and corn in the grain bill.

I'm not sure if I'm just used to blends or I haven't had a good single malt
but I've never been fond of single malt ryes from our local liquor store.
It could just be that I've been drinking cheap single malts that are too young.

I've upped my malting and drying capacity in the last two weeks.
I can malt and dry 20lbs a shot.so i can do about 60lbs a week
Ive got 75 lbs malted and by nextbweek i will have 100lbs ready.
I have done malted rye and unmalted.
I like the malted better.
Next run is gonna be 100% malted rye.
You got me convinced
