wow that was quick- Thanks.

I really would like to Distill my own Whiskey and Rum. the plan was to put it in 1gal barrels and let it age for 12 months.

I can't speak with any real authority, as I haven't aged anything for 12 months yet. But I have noticed considerable results from aging in barrels, but my longest has only been 2 months in a 5Litre barrel.

I have 10 Litres in a barrel that I don't plan to touch till 12 months are up, but even using smaller barrels for "oaking", makes really great results.

Hell, right now I'm drinking some Jack Daniels, as I gave away the last of my product, and felt like seeing what I was missing out on.... I'm pleased to say, I really do prefer my UJSM.. and the irony is, I said that months ago after making a couple of batches of UJSM, but since then, I can't imagine drinking my first experiments (was definately getting far to many heads in the product).

Yes, I am a kiwi, born and bred, haven't worked out how to make a still out of #8 wire yet, but I'm sure its possible if the lead content is 0...

watch them small barrels they will oak real quick . four longer ageing
wait until the barrel has some use on it ,or wash out (,they make some stuff
four this ). too much tannins in new barrels four long term ageing

Check the booze in the barrel regularly. Put in bottles when it's oaked enough for you.

As the barrel gets more use the time to get to the same point of "oakiness" will take longer.

I see- Well I I barrel it at 75% Alc and then want to bottle it at 40%. Wouldnt that cut down or alleviate too much oak flavor?

Yes ,but take samples often cut with water and taste, when it gits the way you
want, stop and bottle (if you have any left :roll: ) it is very easy to over oak in new small barrels
