Rhubarb infusion

Hi I have a Oil jacket keg and I am planning to do rhubarb gin.
Plan would be to macerate 1kg of rhubarb with 3L of neutral macerate it for maybe 1 week after that add junipers,zest etc and make gin.
Rhubarb and botanicals would go to keg without filtering as I have oil jacket.
Anybody been diatilling rhubarb here infusion and can tell me if it's tasted alright ?
Or maybe anybody tried different fruits like cherries or raspberries?

I slice them, chuck them in the pot with the neutral and the botanicals and run it over a flame, or hot plate. They won't burn on unless you run the pot dry.

What fruit you done rhubarb or something else ? How was the taste ?

I’ve made rhubarb & ginger gin twice, tasted nice. 400g/l of 43% and a knob of ginger.

I’ve also done raspberry gin, 500g in 2l of finished gin.

Rhubarb and ginger sounds intresting :D I will give it a go thanks alot buddy :)
Raspberry you added after distillation correct ? You didn't infused it and redistilled it?

It’s complicated. I extracted colour in half of the neutral, then ran them in the still with the botanicals and the rest of the neutral, then added the coloured neutral and adjusted the ABV. You can do that with rhubarb too, but the colour fades quickly.
