leaving yeast in mash for whiskey

Post by nate »

Up until now i have always been allowing the yeast in my whiskey mash to settle, and siphoning off only the clear liquid. I was just reading about a study where it was determined that the yeast in the wash being distilled added a lot of flavor to scotch, does anyone have any experience with this, for a flavorful beverage like whiskey using dry ale yeast would you reccomend i leave the yeast in when i distill it?

That depends on the yeast. ;) A lot of flavor doesn't always mean a lot of good flavor. :)

If you want more flavor, first I'd try lowering the distillation proof some more. :) Then I'd try aging it.
