what kind of yeast to use?

Post by terryt »

Hi everyone - I'm preparing to make a batch of water, sugar and yeast to ferment. What type of yeast do you use, and where can this yeast be bought ? is it is the same yeast that might be used for making beer ?

I use bakers yeast. Since the alcohol will be distilled from the wash the yeast, as far as I'm conserned, doesn't make that big of a difference as it would in beer or wine where it adds more to the flavor of the drink. With the sour mash method I'm pretty sure that with each succsive batch the yeast that are left in the fermentor are the strongest ones so with the process of natural selection I end up with decent yeast by the time I've rant off 3 or 4 fermentors full of wash. JMHO, YMMV.
