Yes! I add a wild dunder fermentation to my wash. What does not kill you makes you stronger. Bring on the funk!

Yes, but only dunder with a controlled fermentation (known inoculation of lacto, brett, etc.).

No, I have a dunder pit but I kill (boil, etc.) the juice before I ferment.

No, I don’t have a dunder pit—yuck, that is unsanitary.

Poll: Do you use active dunder pit juice in your rum wash?

Post by Johnnywhiskey »

As a companion to the thread on using live dunder in rum washes, I thought I would add a poll to keep track of use of dunder and dunder pits. Please also add any comments regarding results, particularly successes or failures using live dunder in your fermentations, and tips on how to get those fermentations to work. In the other thread pH has already been mentioned as a potential stumbling block for wild fermentations.

No wild rum washes yet. But I plan on trying active dunder in my next rum wash.
