Has anyone ever used this yeast? It used to be called American Whiskey Yeast. A bit expensive, but I've used it on three batches so far - stripping runs only, so can't tell you what the final product will be. In any case, it ferments very quickly (seems to me). On an all grain (SG 1.06) it will ferment down to 1.0 in two days.

Different yeasts definitely effect the flavor outcome. When the yeast doesn't flocculate well and is suspended in the beer you will notice a bread flavor. But even when it does get removed you will still notice different flavors from different yeasts. Certain yeasts will ferment cleaner with no fruity esters, while others will ferment leaving a lot of esters. Some yeasts will not be prone to a buttery flavor while others are.
