It is a yeast that can handle higher gravities without osmotic failure (blowing up). LeSaffre Saf-Instant Yeast Gold is easy to find. I don't have much info on it. I'll see if I can get some specs.

Anyone want to give it a go on something really high gravity???

71B can handle higher gravity as well and I use in some of my higher og meads.
If true, this would be a great yeast for my rums as I like the bready flavors there.

Get a bag, test and report the findings. I wouldn't try no 1.120 og tho, maybe 1.0951sh to test it :thumbup:
