Hi all. Have a recipe that calls for gypsum. What does it do and do I have to use it?

It provides calcium for the yeast ... but also provides the secondary benefit of pH buffering.

It's Calcium Sulphate CaSO4 - Also known as "Plaster" (for walls) - Some people use it in brewing I believe.
