DADY yeast exotherm high

Post by Superxsive »

I am doing an all grain whisky with smoked Barley. I had an OG at 1.058 and pitched yeast at 88*F last night. I wrapped up the fermenter and everything has been going well. Today the temp has climbed to 102*F. I took the blankets off and the garage is approx 55*F. Is this temp acceptable or could I be facing a problem soon?

You worry too much.

You pulled the jacket off, so the fermenter will manage. It’ll finish active ferment fast. But wait for the latent ferment to finish too. Give it a week to 10 days, then plan to strip it.

Relax.

Thanks for the quick response! I'm not too worried; just a newbie. :)
