My 1st Outrageous Success!!!

I've been working mostly with UJ and some rum and make a pretty fine drop according to those who've tasted it. Now, I haven't had any stellar success with aging till right this very moment (congratulatory "cup" in hand). Had some 120p UJ on oak since 6/6 of this year, have been opening and airing every couple of weeks and today I decided to do a taste test. At this time I'm considering not even cutting it down to 90p, the front taste is smooth and no "hotness", but going down the throat it gives off a wonderful caramel flavor and the smell gives off a faint caramel aroma. I'm totally impressed. Thanks to everyone who I've stolen info from (TP et al)!!

+1 to that. 90 proof is my favorite too. At 120 proof the alcohol subdues the flavor a bit, even if it's not hot.

But it was worth the wait...right?

Congrats, sltm1, that is nice to hear. It's something we can all identify with, that experience of discovering our product is so feckin' good! I swear, even after many runs, every time I pull that first jar away from the pot on a spirit run, and it has fully switched over to hearts, I still get a very satisfied smile. Each time I think, damn, that is nice! I just wrapped up 5 generations of UJ and it's going into a 2 gallon charred barrel. I hope I have the same experience as you next spring. May all your runs to come continue to be outrageous, Cheers!

Definitely worth the wait, however, I've waited that long for other batches what didn't come out nearly as nice, the only difference was "the angel's share" in airing every 2 weeks. As far as adding water, maybe a splash on ice till I get this formula down....don't want to water any of this batch, may not come around again for a long time!!

So true. Three months is where I'll get into my stash. The wait is the hardest part in this hobby but the most rewarding too.

Tater is made of stone and iron. That fella has a beer keg (perhaps multiple) full of aging goodness, and he has left it unopened for years. You can bet he's got liquid gold tucked away.

There is PP, who has at least some of every run he has made.

I distill only after completely running out of something to drink.

I'm a week shy of 4 months on my uj. Have a bourbon that is almost 7 months. Goal is to get two years ahead of my self.

You betcha! That and getting better praise when your friends and family finally do get their hands on it.

Earlier this year my sister found me eighteen 1 gallon apple juice jugs for $10 at a garage sale. My wife asked me what I was going to do with all of them. I said "Fill 'em!"

At the time I thought that I was just kinda talking big but now I've got 13 filled with UJ, Mongrel Rum, sweet feed, apple brandy, vodka and a couple with rum feints and another with whiskey feints.

Happiness is having multiple ferments going at all times!
